Tasty Tuesday: Baked Apples

I don’t know about you, but certain times of the month I CRAVE sugar…really hardcore crave it! Such was the case yesterday…although there were no sweets to be found in the house. So I examined the contents of my fridge and pantry trying to be creative in satisfying my need for something sweet. My crisper drawer held 3 red apples that looked so tasty, I decided to make baked apples. It probably took me about 25 minutes to make and less than 3 minutes for the boys and I to devour it. Yep, it was THAT good!

The recipe below makes a rather small amount so you might want to double or even triple if you are serving to a larger group.

Ingredients:

3 apples, peeled and chopped

2 tablespoons maple syrup (or sweetener of choice)

2 tablespoons coconut oil

generous sprinkle of cinnamon

dash of nutmeg

dash of cloves

small handful of chopped pecans

Directions:

Mix all ingredients together until apples are well coated. Bake uncovered at 375 degrees for approximately 20 minutes or until apples are soft. Enjoy!

I ate mine topped with vegan whip cream made from coconut milk (recipe coming soon!) and a sprinkle of cinnamon. Apparently I needed mine to be extra sweet and fatty, although my boys enjoyed their baked apples without any cream on them. This was the perfect sweet treat and really hit the spot! Baked apples are such a warm and comforting treat I think it would make an excellent dessert to serve a new mama!
