Tasty Tuesday: Simple Spinach Salad

Recently a friend of mine brought this super simple spinach salad to a mutual friend’s blessingway. It was so yummy, I think had like 4 servings of it.  I made it today and pretty much munched on it all day long. I probably ate close to a pound of spinach today…although I did save a little for hubby to enjoy.




3 generous handfuls of spinach

1 small onion, very thinly sliced

2 tablespoons high quality olive oil

1 tablespoon dried dill (or you could chop up about 1/4 cup of fresh dill…yum!)

juice from 1/2 a lemon

salt and pepper to taste


Toss everything together in a large bowl and serve immediately. Whenever you pre-dress a salad it is best to eat it right away, otherwise it ends up soggy.

The raw onion and dill on top of crunchy spinach with the zesty lemon juice are the perfect combination of flavors. Enjoy!!

Silent Saturday: Let me introduce you to some old friends…

These old skool Thirsties are the oldest diapers in my stash. They have been good to us for 5 1/2 years now and used full time with FOUR kids! True, I only have three kids…however  I lent them out to a friend to use with her son for a year.

You can see how well loved they are…

Velcro is pretty worn…

However despite their appearance, they still function just fine and are used on a regular basis!

Anyone brave enough to create a formula that would calculate the amount of money saved using these diapers for over 5 years on 4 different bums? Or the amount of disposables avoided? I bet the numbers are pretty high?!?

Friday Family Spotlight: Meet Shannon’s Family!

I am excited to introduce you to Shannon’s awesome little family! Shannon is super witty, kind-hearted, talented, and beautiful…both inside and out. How do I know this about her? She’s my cousin! She’s that cool older cousin who lives far away that you only see once in a while as a kid…yet you always want to be like them because their life seems so fun and different from your own. I remember going to the bathroom at her house in rural upstate New York as a kid and looking out the window to see a huge cow staring directly at me. Stuff that like never happened in the ‘burbs of Chicago where I grew up.

Well now Shannon lives in Canada and is a mama to an incredibly cute baby girl. Read on to learn more about her family:

Who are the members of your family? Shannon (me), my husband Greg and our 5-1/2-month-old daughter Nora.

How did you meet your significant other? We met at a party in Brooklyn, over a bowl of chips. Neither of us really knew anyone. Greg wooed me by doing some Ukrainian dance moves (he did traditional dancing as a kid). I thought, “either this guy is really fun or a little nuts.” As it turns out he’s both.

What do you and your family like to do for recreation? With a five-month-old in the dead of a Toronto winter we tend to spend a lot of time at home, but we go on long walks in the city, go to coffee shops, and go out to brunch. I’m lucky to live in Canada, where I get a year of maternity leave, so I meet up with other moms and babies a couple times a week for “playdates.” Nora is very social and loves being out and about. We’re looking forward to her being old enough (and it being warm enough in Toronto) for biking, hiking, canoeing, and camping. And I anticipate a lot of family board game nights!

What is your favorite baby carrier and why? The Moby Wrap is my favorite because it’s so comfortable (for me and baby), feels very secure, is easy to pack for travel, and has full coverage, which is nice for cool and cold weather (though in winter I also use a carrier cover).

Describe your cloth diaper stash: We mainly use Cloth-eez Workhorse fitted diapers with Thirsties covers, and Flip diapers. We have a bunch of Bummis prefolds, but mainly use them to stuff Flip covers. We’ve got a few FuzziBunz Perfect Size diapers, too. I love how soft they are, and it’s really easy to get stains out of them.

What is the best and worst parenting advice you have ever been given? Best: Spend at least 30 minutes a day alone doing something you enjoy. I can’t say I always do this, but when I do, I’m a much better human being. Worst: There’s no reason to breastfeed past three months.

What has been your toughest challenge as a mom so far? Hands down, staying level-headed and positive in the face of sleep deprivation. Before having a baby I knew that newborns are up at all hours and I was perfectly happy to go a few months without regular sleep. I didn’t realize I may not get a full night’s sleep for one or two years! (If it’s longer, don’t tell me. I don’t want to know!) I just try to remember that it will pass, and to appreciate all the cool things about this time.

What are some of your favorite “me” time indulgences? I like to make myself a big breakfast most days. It feels luxurious to whip up an omelet, smoothie and a soy latte during naptime. (Another perk of long maternity leave!) My biggest indulgence is probably a full-body massage once a month, and my get-togethers with other moms keep me sane. I’m anticipating my first girls’ night soon, now that bedtime is becoming fairly predictable!

Oh and the guy jamming the guitar is her brother. They are kind of a musical family…unfortunately none of that talent was passed this way in the gene pool. 😉
